It used to be muffins!  Everyone was baking muffins!

Now it’s cupcakes.  3 Minute Chocolate Cupcakes!

I love cupcakes, but had never baked one.  My muffins were always dry after the first day.  Didn’t matter what I did …. fresh flour, fresh eggs at room temperature, minimal mixing …. you could just about use them as bricks the next day.  So I never bothered with cupcakes, it was easier to buy them, knowing they would be rich and moist and oh so yummy 🙂

Until one of my clients asked me if I’d bake some!  That’s when I learned about her 3 Minute Chocolate Cupcake recipe.


But initially, it was a real OMG moment …. do I tell her I have no idea, that they might turn out like mini bricks, that you probably wouldn’t want to eat them (even to be polite!).

No worries, she said, I’ve a brilliant recipe I’ve been using since I was a teenager.  ‘It’s only for the girls’ to take to school’.  So there I was, in someone else’s kitchen, with their 3 Minute Chocolate Cupcakes recipe, agreeing to bake something I’d never tried before!

Well, I’m thrilled to say the cupcakes were a success.  Baked and iced in a couple of hours, and moist to boot, even the next day.  I’ve now made this same recipe several times at home, and they are good every time!


So …. here’s the recipe

3 Minute Chocolate Cake (No … 3 minutes is how long it takes to prepare, not cook!)

  • 2 Tblspn Butter/Margarine
  • 2 Tbspn Cocoa
  • 1 Cup SR Flour
  • 1 Cup Sugar
  • ½ Cup Milk
  • 2 Eggs
  • 1 Tspn Vanilla Essence

1. Preheat oven to 180C
2. Melt the butter
3. Sift flour, sugar and cocoa into a bowl.  Add all other ingredients, pouring butter over the top.
4. Beat together for three minutes.Bake in a moderate over for about 40 mins for a large cake, or 20 – 25 mins for cupcakes.
