Yummy Mini Christmas Pudding Truffles – these are just too easy to make!
Perfect for Christmas gifts, or taking anywhere over the festive season.
Ingredients (makes about 40)
200g dark chocolate, chopped (I use the Cadbury Melts)
700g dark fruit cake (any uniced fruit cake will do – mine was actually 800g)
1/3 cup orange juice (or you could use a liquer of choice)
1/2 cup icing sugar, sifted
250g white chocolate melts
40 assorted mini coloured jelly beans (or mini M&Ms)
Method
1. Melt dark chocolate in a heatproof bowl over a saucepan of simmering water, stirring until melted and smooth.
2. Crumble cake into large bowl. Add dark chocolate, OJ and sugar, stirring to combine. Refrigerate 20 minutes until firm to handle.
3. Roll teaspoonfuls of cake mixture into balls, placing on baking trays lined with baking paper. Flatten bases slightly so they don’t roll. Refrigerate until firm.
4. Melt white chocolate following method in Step 1. Cool for 10 mins, then drizzle over puddings to form ‘custard’. Decorate!
